In short
The word gets used loosely, so it is worth separating stems from the two things they are often confused with. A track is a single recorded part — one microphone on one snare drum. A stem is a group of tracks bounced together, so the whole drum kit becomes one file. A multitrack is every individual track, unmixed. Stems sit deliberately in the middle: fewer files than a multitrack, more control than a stereo mix.
Four stems is the usual split — drums, bass, vocals and other — because that is what a remixer, a mastering engineer or a live playback rig realistically needs. A DJ can drop the vocal over a different instrumental. A supervisor can lower the vocal for a TV cue without the music going with it. A mastering engineer can address a problem that a stereo file has already welded shut.
Splitting a finished stereo file back into stems is a different operation, and the distinction matters. Real stems come from the original session, where the parts were never mixed together. AI separation makes an educated reconstruction — and it is genuinely good now — but it is estimating what was there, not recovering it. The places you hear the estimate are the shared ones: reverb tails, cymbals, and anything sitting in the same frequency range as the vocal.
For AI-generated music this is the most useful capability to look for. A generated stereo file is difficult to change; generated stems are material you can actually produce with. If you plan to finish a track in a DAW, stem export is worth more than almost any other feature.
